The first time I made it, I fell in love and so did my son. We love it so much, we could probably eat just about the whole pot in one day by ourselves lol. Right!!! I know it's not healthy to eat a lot of starch, but it is so good! Each time I made it, I got more creative and came up with my own way of making it. I hope that you all enjoy the video and make sure you try the recipe.
What You Will Need:
2-3 large potatoes peeled and cut (3-4 cups depending on the amount you like)
1 small head of broccoli cut up. Equals to about 1 cup (you can add more if you like)
3/4 cup of onions
4 cups of chicken broth
1/2 tbsp of kosher salt
1/2 tablespoon of pepper
Add all of the ingredients above to your crockpot and cook for 1 1/2 - 2 hours on high (time may vary depending on crockpot). Your potatoes and broccoli should be almost done.
Roux
4 tbsp (half of a stick) of butter
1/4 cup of flour (add a little more for a thicker roux
1 1/2 cups of heavy cream
1/4 cup of sour cream
Add ingredients in the order listed. You may follow the video. Once your roux is made add to the crockpot, mix well and cook for another 20 - 30 minutes.
Optional: Top with sharp cheese (or your choice of cheese), crumbled bacon, and fresh chives
